How to Make Cheesy Nachos with Homemade Tortilla Chips

Ingredients:

For the Nachos

  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound ground beef
  • 1 (1-ounce) package taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 Roma tomato, diced
  • 1 jalapeño, cut into slices
  • 2 tablespoons chopped fresh cilantro
  • Sour cream for topping (optional)
  • Guacamole for topping (optional)

For the Homemade Tortilla Chips

  • Oil for frying
  • 8 large corn tortillas
  • Salt

Directions:

To make the tortilla chips

  1. line a large plate with paper towels. In a large skillet over medium heat, heat the oil. Stack the tortillas and cut them into 6 pieces (you should have 48 total). Add the tortilla pieces to the hot oil and fry until they start to puff. Transfer the tortilla chips to the paper-towel-lined plate and sprinkle with salt, to taste. Set aside.

To make the nachos

  1. Preheat the oven to 400°F.
  2. In a medium skillet over medium-high heat, heat the vegetable oil. Add the onion and garlic and cook, stirring frequently, until translucent, about 1 minute. Add the ground beef and cook, breaking it up with a spoon, until browned, 4 to 5 minutes. Add the taco seasoning and stir to combine. Taste and add more salt if needed.
  3. Spray a baking sheet with nonstick cooking spray. Place the tortilla chips in a single layer onto the baking sheet. Top with the taco beef mixture and sprinkle with the cheddar and Monterey jack cheeses.
  4. Bake until the cheese melts, 5 to 6 minutes.
  5. Top with the tomato, jalapeño and cilantro. Serve with sour cream and guacamole, if desired.
